Healthy Banana Bread

Banana bread brings back so many childhood memories. I ordered it all the time in cafes, and loved watching the thick square of butter melt into the warm, brown toasted sweet bread. The more butter the better in my eyes – little did I know how much butter had already been used to make the delicious, sweet buttery cake. With no care in the world I would demolish the entire thing before it got cold.

The name itself is a tease, because we all know banana bread is more like cake, so it isn’t something I would call healthy or indulge in these days. So it became my mission to find the best vegan banana bread. Many recipes I found used large quantities of flour, so it wasn’t until I found this one that I felt I could say this is the healthiest banana bread ever!

Its gluten free, vegan and made from natural ingredients.

You may look at the ingredients and not be tempted to make it, then whilst cooking you’ll start thinking I’m crazy as I’m not going to lie before cooked it looks a little like vomit. But please trust me, that once cooked and out of the oven you’ll have no regrets. Its light, its fluffy and it tastes legit!!!

Ingredients

300g Banana

3 tbsp chia seeds

2 tbsp maple syrup

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp sea salt

1/4 cup + 2 tbsp coconut flour

1 tbsp coconut oil

Method

  1. Mix 3 tbsp chia seeds with 1/4 cup of water and set aside for 20 mins.
  2. Mash the bananas, and then add the rest of the ingredients including the chia seed mixture.
  3. Stir and pour into a loaf pan.
  4. Bake for 40-45 mins at 175 degrees then enjoy
