Raw twix bars

This was the first ever vegan dessert I ever made and they were a huge success!! Not only because they inspired me to continue experimenting with raw, vegan food but also because  was very popular when I took them to school to share.

Honestly I don’t know why people buy chocolate bars when you can make healthier ones at home that literally taste 10x better!! This are so rich in flavour and nail all the ingredients of a normal twix bar. Really unless you’re allergic to nuts, you have no excuse not to try making these.

BASE – FUDGE

½ cup walnuts

½ pecans

¼ raw cacao powder

2 tbsp agave (maple syrup?)

½ tsp vanilla extract

Pinch of salt

2nd LAYER – COOKIE

1 cup almonds

1 tbsp melted coconut oil

1 ½ tbsp agave (maple syrup?)

½ tsp vanilla extract

3rd LAYER – CARAMEL

25 medjool dates – if they aren’t soft soak in water to soften

2 tbsp melted coconut oil

1 tbsp almond butter (organic peanut butter?)

1 tbsp almond milk

CHOCOLATE COAT

ratio 1:2:1

Agave

Raw cacao powder

Melted coconut oil – the more melted the more liquidity the chocolate

METHOD

1. Put all base ingredients in food processor and blend until dough is formed

2. Line the bottom of pan with the dough and place in freezer

3. Place cookie ingredients in food processor and blend until dough is formed

4. Remove base from freezer and layer cookie on top then place back in freezer

5. Place all caramel ingredients in processor and blend until smooth (takes time)

6. Run a knife under hot water (to make easier to spread) then spread caramel filling onto cookie layer

7. Place back in freezer to harden

8. Top with raw chocolate and place in freezer for 4 hours then cut and enjoy

9. Store in fridge and enjoyyy!
